Episode 5: Neck Baby for You!

Recipe source:

  • 1 lb ground beef

  • 2 tsp taco seasoning

  • 12 burrito-size flour torillas

  • 2 - 15 oz. cans pinto beans, or 4 cups cooked

  • 1/2 lb shredded cheddar cheese

  • hot sauce, shredded lettuce, salsa, enchilada sauce, guacamole, sour cream (optional toppings)

Cook the ground beef in a pan over medium heat, season with the taco seasoning. Stir until browned. Drain grease. Lay out the tortillas and divide the beans, meat and cheese in a line across the bottom 1/3 of each tortilla. Roll the tortilla, tucking in the sides as you roll. Heat a griddle and place the rolled chimichangas on the griddle, turning frequently until sides are crisp. Serve with toppings of your choice.


Recipe source:

  • 4 cups all-purpose flour

  • 1/2 tsp salt

  • 1 tbsp baking powder

  • 1 1/2 cups warm water (~110F/45C)

  • 4 cups oil or shortening for frying

Combine dry ingredients. Stir in water, then knead until soft and not sticky. Shape the dough into balls that are 3 inches in diameter. Flatted the balls into patties 1/2 in. thick and make a small hole in the center of each. Fry one at a time in hot oil/shortening turning to brown both sides. Drain on a paper towel.



  • 1/2 oz Irish cream

  • 1/2 oz. coffee liqueur

  • 1/2 oz whipped cream

Pour the Irish cream into a shot glass and top with coffee liqueur. Garnish with whipped cream. Cover with entire mouth, knock it back and figure out how it got its name.

  • 2 msr tequila (~2 oz.)

  • orange juice

  • 2 dashes grenadine syrup

Pour tequila into a highball glass filled with ice. Top with orange juice and stir. Add grenadine, letting it settle to the bottom of the glass. Garnish with an orange slice and a cherry if desired.
